We LOVE having breakfast for dinner and we do it at least once a week.  One of our favorite foods to eat are pancakes with bacon.  It' such an easy and pleasing dinner.  Here is a recipe for homemade pancakes that taste very close to IHOP pancakes.  Most of these ingredients are usually on hand in a cook's kitchen so mix a batch together and enjoy those pancakes!

You Will Need:
  • 1.25 cups sifted all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 egg, slightly beaten
  • 1.25 cups of milk (or buttermilk)
  • 2 tablespoons of melted butter
  • .25 cup of white granulated sugar
Instructions:
  1. Sift together the flour, baking powder, baking soda and salt.
  2. In a separate bowl, combine egg and milk.
  3. Add the flour mixture stirring just enough to smooth.
  4. Blend in melted butter and sugar
  5. Preheat a greased griddle to medium.
  6. Drop about .25 to .50 cups of pancake batter in sections on the preheated griddle.
  7. Cook until the pancake edges stiffen or brown lightly; turn and brown the other side.
TIPS
Use a little extra milk to loosen the batter up enough to make the pancakes a bit thinner.  This also makes the pancakes lighter and fluffier.  Adjusting the milk amount will allow you to create the pancake tot he consistency and thickness you like best.  Also, try topping the pancake with fruit compotes.  Warm up fruit and a little bit of sugar in a sauce pan with a touch of cream until smooth and the fruit is softened.  This makes a delicious topping if you are in the mood for something other than the usual syrup on top.

Whip heavy cream and sugar together and make your own whipped topping. (2 cups of cream to half cup of sugar - beat until desired stiffness, take a few minutes)

Try using wheat flour and see if you like a lighter healthier pancake!  Also, artificial sweeteners can cut down on the amount of sugar calories without jeopardizing the taste.
